EDITAR : Eu encontrei uma reivindicação de Gateworld Forum volta para 2005 que o brilho é o simbionte assumindo a visão do host.
The symbiote is able to grow an additional optical nerve channel for itself that is connected to its regular one which it can expose and then attach to the humans extra nerve channel.
E o interruptor menciona.

Uma alternativa é que o simbiótico cega o hospedeiro e assume o controle total da visão, mudando-o para o seu próprio canal. O que não posso esclarecer é que ele compartilha a visão do hospedeiro ou não, mas eu suponho que sim, e talvez ele precise mudar para ver algo que o olho humano não pode.

Eles transferem essa capacidade para o host. Agora, para responder por que eles brilham, eu vou dizer o mesmo que a voz, para intimidar. Há uma menção na wikia sobre a voz.
