Can an Eldritch Knight cast rituals?

When you learn a spell as an Eldritch Knight (determined by the EK chart) you can cast as a regular spell using a spell slot. You cannot, however, cast those EK spells as a ritual, even if it has the ritual tag. Can Eldritch Knight change spells? The spells you learn at 8th, 14th, and 20th level can come from any school of magic. Whenever you gain a level in this class, you can replace one of the wizard spells you know with another spell of your choice from the wizard spell list.

How many cantrips can Eldritch Knight have?

An eldritch knight only gets 2 cantrips to start. This is very limiting.
