Sua pergunta é baseada em uma premissa errônea. Arya não parou de mencionar Ilyn Payne em sua oração. O Cão é o único que ela omitiu enquanto ele estava vivo. Como @ Aegon resposta nos diz que há confusão na questão, eu gostaria de explicar de onde esta confusão está vindo, já que lembrar as diferenças entre o programa e os livros pode ser bastante desgastante.

Da perspectiva de Game of Thrones , Sor Ilyn Payne (presumivelmente) ainda está vivo. Embora não o tenhamos visto desde S02E09 "Blackwater", ele foi mencionado em S04E10 por Tywin em conversa com Tyrion.

Por que nós não o vimos ... foi porque o ator Wilko Johnson estava . Ele se aposentou da atuação e anunciou uma turnê de despedida (Johnson era um músico antes de agir). Embora ele tenha melhorado em 2015 , parece que os escritores simplesmente deixaram seu personagem cair na obscuridade ao invés de dar a ele uma finalização mais definitiva.

Considerando que estamos entrando na 8ª e última temporada do show e o personagem não foi visto ou ouvido falar em três temporadas, é seguro assumir que ele não estará reaparecendo. Então, de uma perspectiva do universo, Arya provavelmente acredita que Sor Ilyn está morto.
